I should know better. I should know eating real food has spoiled me for the SAD diet.
I was called away to work and hadn’t prepared lunch yet. I sent Kate down to our emergency pantry to see what we could heat up in a hurry since the fridge held no leftovers. She came back up with six cans of chili. Ooh! I love chili! Some real cheese grated over the top and that should be just fine!
I put the chili on to warm while I showered and dressed. I made myself a small bowl to eat while I did my face and hair. My first bite was disappointing, the next was mildly disgusting, the third (and last) was too horrible to continue. The beans were mushy and flavorless and the only seasoning I could sense was salt. Lots of salt. Loads and loads of salt. I used to eat this same brand and variety twice a month. Now I could barely swallow it. Lesson learned.
I found “our” pancake and waffle recipe! It’s going right into my “Mom’s Best” cookbook. (More on that in another post.) I found the recipe at Sue Gregg’s site, thanks to a link from Kelly. Now, I remember Sue Gregg from a bazillion years ago, but I don’t ever remember her soaking grains! I don’t know if this is a new development or if I just slept through that part of the class. But anyway, here’s the link.

This is such a good recipe. It was a relief to see the kids eating these!
Dinner really made up for the disappointing lunch. I found some grass-fed Buffalo meat at the grocery store (!) and made these stuffed peppers. It was a very simple recipe, adapted from NT: just meat, onions, rice, tomato paste, a little beef broth simmered and stuffed into bell pepper halves. I made most of them covered with grated cheese, but for my no-dairy girl, I put a smiley face on the top with sliced olives. We just had to call them “Ta-tonka Bells” (a reference to the film Dances with Wolves.) I was surprised, it wasn’t gamey at all. Alongside, you see sliced sweet potato, baked in coconut oil and clarified butter. I had a bunch of leftover egg whites from scrambled eggs a couple days ago and made meringues that dried all last night in a low oven. Today I made some chocolate whipped cream (yes, we eat chocolate here) and topped the meringues with it. A very satisfying dinner.
