		<description><![CDATA[I have loved this squash since I was a kid in Massachusettes. Here in Tennessee Blue Hubbard Squash is used as a lawn decoration. In the past I have only just boiled it and scooped it out and mixed it with salt and pepper. My niece served us roasted butternut squash and my son loved it. So we are going to roast our Blue Hubbard this year. It has been a tough year for this type squash I almost did not get one. This was due to the flooding here in Tennessee. Nice to see others that appreciate this squash. I bought mine for three dollars a piece.]]></description>

The recipe looks great - unfortunately I am grain free and mostly dairy free but it gives me a starting point of making something new and different with the squash.  I&#039;ll have to go back and get one now!

I think ground up almonds or pecans would make a great breadcrumb topping for people who can&#039;t eat gluten or grains.
